INGREDIENTS:
· Onion chopped (chhote katte pyaz) – 3 medium sized
· Potato thin & small pieces (chhote aur patle katte aaloo)- 2 medium sized
· Gram flour (besan)- 2-3 big spoons
· Dried fenugreek leaves (kasoori methi) – 1 spoon
· Carom seeds (ajwain)- 1 teaspoon
· Red chilli powder (pissi huyi lal mirch )- one fourth teaspoon
· Coriander powder (pissa hua dhaniya)- half teaspoon
· Tumeric powder (pissi huyi haldi)- one fourth teaspoon
· Green chillies chopped (barik katti hari mirch)- 1medium sized
· Salt (namak)- as per taste
· Refined oil – to fry
HOW TO MAKE:
· Take chopped onion, small pieces of potatoes & green chillies in a broad bowl and mix well.
· Add gram flour to bind onion & potatoes. If consistency is very thick, then add very little water, just to bind and coat well
· Add rest all spices except refined oil and mix well.
· Try mixing with hand J desi style
· Heat oil in deep frying pan/kadhai
· Once oil is hot, slowly slowly put small portions of aalo pyaz mixture in oil with your hands, but please take care of your hands J jaldi nahi… aaram se
· Fry bhajiya till it turns golden brown & crisp and sieve it out & place on kitchen towel/paper napkin to extract excess oil from bhajiya
· Now its time to relish garma garam aaloo pyaaz bhajiya with imli chutney, pudina chutney or tomato ketchup & ofcourse with chai ( for masala chai check Tea Masala recipe at http://timeinkitchen.blogspot.in/2012/11/tea-masala.html ) or coffee J
