HOW TO MAKE :
- Take a big bowl. Mix Sooji, curd, salt and mix well to form a soft paste. And keep aside.
- Take a frying pan/kadhai. Heat refined oil and add mustard seeds. Let the seeds crackle. Then add green chillies and curry leaves. Fry them for 2-3 seconds.
- Then add red chilli powder, turmeric powder, dry coriander powder and salt. Then add mashed potatoes and mix well. Fry them on low flame for 5 minutes, continuously stirring in between to avoid burning of mashed potatoes.
- In last, add chopped onion, green peas and green coriander leaves. Mix well and turn of the flame. Let this filling cool down for few minutes.
- Now add eno to the sooji curd paste and mix it lightly. You can add little water if required.
- Now heat flat non stick pan/tawa/dosa tawa. Heat it little and evenly grease it with little oil. And clean the surface with a soft piece of cloth. Then sprinkle little water and again clean it with soft piece of cloth. Repeat this process for 2-3 times, as this would help to make tawa extra soft.
- Now evenly grease tawa with oil and take a big serving spoon of sooji curd paste and evenly spread it into a circle with the help of back side of the spoon, starting from inside moving towards outside. Spread it till thin layer is formed.
- Sprinkle few drops of oil n the edges to avoid sticking of the base. Check if not sticking, this means it is done.
- On half side of the round dosa base, spread aloo filling evenly. And fold the other side lightly and press it with spatula firmly.
- Change the side, so that both the sides turn little crisp. Remove this dosa in serving plate.
