VEGETABLE POHA

Come.... lets know the recipe of this healthy snack, "VEGETABLE POHA"




Ingredients:

  • Beaten Rice (Chidwa/Poha) - 2 cups
  • Sliced onion (patle lambe katte pyaaz) - 1 big
  • Sliced potatoes (patle lambe katte aaloo) - 1 big
  • Thin sliced Carrot (patli katti huyi gajar )- 1
  • Green peas (matar ke daane)- half cup
  • Peanut (moongfali dana) - 1/4th cup
  • Chopped Red Tomato (chhota katta tamatar) - 1
  • Chopped green chilly (barik katti hari mirch)- 1
  • Chopped Coriander leaves ( katta hua hara dhaniya) - 1 spoon
  • Mustard seeds (raai dana/ sarso dana)- 1 spoon
  • Curry leaves (curry patta)- 6-8
  • Lemon juice (nimbu ka ras) - half nimbu
  • Turmeric powder (haldi)- half teaspoon
  • Salt - to taste
  • Refined oil- 2-3 spoons

Method :

  • Soak poha in water for 5 seconds. Drain water and keep wet poha aside.
  • Take a wide frying pan (karhai). Put oil and add mustard seeds and let it crackle and then add moongfali in it and fry for 5 sec.
  • Add chopped green chilly, onion and fry till it turns light golden in colour, add matar, carrot and potato and place lid and let vegetables turn soft for 2min.
  • Add curry leaves, tomatoes and add turmeric powder and salt and mix well.
  • Add wet poha and toss well with light hands, so that poha is not crushed but vegetables and spices are mixed well.
  • Add lime juice and coriander leaves and toss with light hands.
Serve hot.....  
 You can relish garma garam Vegetable Poha in breakfast or in the evening... (also you can add more vegetables of your choice)... Can serve with tomato ketchup as well...
