VEG. MUSHROOMS IN HOT & SWEET GRAVY........



VEGETABLES & MUSHROOMS..... a healthy treat for you
        In mouth watering  HOT & SWEET GRAVY......



Ingredients:

·        Diced carrots (katti huyi gajar) – 1 cup
·         Cauliflower florets (phool gobhi katti huyi )- 1 cup
·        Green beans (katti huyi hari lobia k falliyan) – 1cup
·        Diced capsicum (katti huyi shimla mirch)-1 cup
·        Mushrooms (sliced) (lambi katti mushroom)- 1 cup
·        Onion diced (motte tukkro mein katta hua pyaaz )- 1 cup
·        Tomato puree (pisse huye lal tamatar)- 2
·        Garlic finely chopped (barik katta lehsun) – 1 spoon
·        Corn flour – 1 and half spoon
·        Soya sauce – 1 spoon
·        Tomato ketchup  - 2 big spoons
·        Sugar- ¼ th teaspoon
·        Black pepper powder (kali mirch pissi huyi)- ¼ th  teaspoon
·        Red Chili powder (Degi mirch)- half teaspoon
·        Salt- to taste
·        Refined oil- 3 spoons

Method:

·        Take one spoon refined oil in a pan and add chopped garlic and sauté till it turn light brown and add mushrooms and stir fry till mushrooms leave water and water evaporates. Mushrooms will become tender during this only. Take out these mushrooms on kitchen tissue
·        Take a big pan and add water and bring it to boil
·         Put cauliflower florets, green beans, carrot in water and let it be blanched for 2min and strain the vegetables through cold water to retain crunchiness of the vegetables and keep aside.
·        Take a big frying pan (kadhai), and add rest 2 spoons of oil and add onions and capsicum and sauté it for 10 seconds on high flame, stirring continuously
·        Add tomato puree and stir for next 10-15 seconds and add 2 cup water
·        Add blanched vegetables, soya sauce, tomato ketchup, red chili powder, black pepper powder, sugar and mix well
·        Mix corn flour with half cup water in a separate bowl (avoid lumps) and add this diluted cornflour in kadhai and mix well. Bring it to boil with lid on the kadhai for 2 min. on medium flame.
·        Add mushrooms and salt and bring to boil on high flame and turn off the flame.

Serve hot with fried rice, steamed veg. rice, noodles……… J
