SPICY RAJMA WRAPS


Something yummy to fill your tummy….

Here we present teekhe rajma, marinated onion and mint curd chutney filled in soft roti wrap…



INGREDIENTS: (4-6wraps)

FOR FILLING:
·      Red kidney beans hard boiled with little salt, once boiled keep beans and its stock aside (rajma thode sakht ubaale huye thode se namak ke saath, ubaalne ke baad pani aur rajma alag rakh dein) – 1 cup
·      Onion (pyaz)- 1 medium size
·      Red Tomatoes (Lal tamatar) – 4 medium size
·      Green chilli (hari mirch)- 2
(Grind onion, tomatoes and green chillies in fine smooth paste)

·      Ginger garlic paste(adrak lehsun pissa hua)- 1 tbspoon
·      Cloves (Laung)- 2
·      Cinnamon stick (Dalchini)- 1 inch
·      Cumin seeds (jeera)- ¼ tea spoon
·      Turmeric powder (haldi pissi huyi)- ¼ teaspoon
·      Red Chilli powder (degi lal mirch)- 1 tea spoon
·      Coriander powder (pissa hua dhaniya)- 1 teaspoon
·      Garam masala- ½ teaspoon
·      Refined oil- 2 spoons
·      Salt to taste (namak swaad anusaar)

FOR MARINATED ONIONS: Finely slice 1 big onion and add pinch of salt and lot of lemon juice and keep aside.

                 MINT-CURD CHUTNEY: Add 2 spoons of curd into 1 cup of mint coriander chutney (pudina dhaniya chutney) and blend well.

                 FOR ROTI WRAP: Knead soft dough with 1 cup flour (maida) and add pinch of salt.


HOW TO MAKE :
·      Heat oil in a pan and add cumin seeds, cloves, cinnamon and ginger garlic paste and sauté for 5 seconds.
·      Add onion tomato onion and chilli paste and fry it stirring continuously till water inside paste is evaporated and red shinny color appears.
·      Then add turmeric powder, red chilli powder, coriander powder, garam masala and salt and mix well. Add little water to avoid burning of gravy.
·      Once thick gravy appears, add little of beans’ retained stock in the gravy (rajma ka thora sa pani) and mix well.
·      In thick gravy add boiled beans and mix well and cook for 4-5 minutes till gravy is thoroughly coated with beans. Turn off the flame.
·      Take little maida dough and roll it into thin round roti and place it on griddle (tava). Turn upside down and prepare it directly on flame to puff up as we make phulka…(gas par fulaya hua phulka)

·      Once roti is ready, on half side spread spicy beans, put big spoon of mint- curd chutney and marinated onions and fold rest of the roti. 

Serve hot…….  :-D
