TANGY SWEET & SPICY MACRONI WITH REFRESHING CREAMY CUCUMBER TOMATO

    " SUMMER BLESSINGS" 


INGREDIENTS:   

(FOR TANGY SWEET & SPICY MACRONI)
  • Macroni - 1 cup 
  • Capsicum thin sliced(patli katti shimla mirch)- 1 medium size
  • Onion thin sliced (patli lambi katta pyaz) - 1 medium size
  • Carrot thin sliced (patli katti gajar)- 1 small
  • Tomato ketchup- 3 big spoons
  • Flour (maida)- 1 big spoon
  • Milk (doodh)- 1 cup (without cream- bina malaai)
  • Butter (Amul butter) - 1 spoon
  • Refined oil- 3 spoons
  • Red paprika (degi lal mirch)- 1/2 teaspoon
  • Black pepper powder (kali mirch peesi huyi)- 1/2 teaspoon
  • Italian seasoning - 1 teaspoon (optional)
  • Salt to taste (Namak swaad anusaar)

(FOR REFRESHING CREAMY CUCUMBER TOMATO)
  • Cucumber small diced (chhote tukro mein katta kheera)- 1 cup
  • Red Tomato small diced without pulp (binna gudde ke chhote tukro mein katta lal tamatar)- 1/2 cup
  • Chilled Fresh cream (thandi taazi malai)- 2 spoons
  • Lemon juice (nimbu ka ras)- 1 teaspoon
  • Black pepper powder (kali mirch peesi huyi)- 1/4 teaspoon
  • Salt to taste (Namak swaad anusaar)
HOW TO MAKE :

TANGY SWEET & SPICY MACRONI:
  • Boil macroni in 4-5 cups of water, 1 teaspoon salt and 1 teaspoon refined oil. Once it turns soft sieve it. and pour cold water to avoid macroni to get sticky (do not over cook as it may get mash or become sticky). Keep marconi aside.
  • Take rest refined oil in a pan and add onion and carrots and saute it on medium flame for 30 seconds stirring continuously and add capsicum and saute for another 30 seconds and keep aside.
  • Take butter in a pan and melt it and add flour and saute on slow flame stirring continously for 30 seconds and add milk and mix well so that no lump arises. Reduce it little stirring continuously till it becomes bit sticky. 
  • Then add tomato ketchup, red pepper, black pepper , Italian seasoning and salt and mix well.
  • Add saute onion, capsicum, carrots and macroni in the sauce and mix well. Serve hot.

REFRESHING CREAMY CUCUMBER TOMATO:
  • Take a bowl and whip the cream little bit to remove lumps.
  • Add cucumber, tomatoes, lime juice, black pepper and little salt into the cream and mix well.
  • Refrigerate for 10 min before serving. Also you can garnish it with a sprig of fresh green coriander leaf
Note:
       To make it look more attractive, grease a rectangular dish with very little butter and fill it with tangy sweet & spicy macroni and press it to flatten and make upside down on the plate to give it a cake shape.
