KACHA AAM WAALA BHARWAN KARELA

Here we present recipe of Kacha Aam Wala Khatttaaaaa Bharwan Karela... :-)




INGREDIENTS :
  • 4 medium sized bitter gourds ( madhyam aakar ke karele)- peeled and slit it and scoop out its seeds with knife and rub salt inside and outside of bitter gourds and keep aside for 15 minutes (karelo ko chheel kar usme seedha cheera lagakar, uske beej nikal kar alag kar ijiye, aur karele ke andar bahar namak laga kar 15 mnute ke liye alag rakh dijiye)
  • Onion (pyaaz)- 2 medium sized
  • Raw Mangoes peeled and diced, remove its seed (kache aam/kachi kairi, chheel kar tukro mein katti huyi aur guthli nikal dijiye) - 3 medium sized 
  • Red Chilli powder (lal mirch pissi huyi) - 1/2 teaspoon
  • Coriander powder (sookha dhaniya peesa hua)- 1 teaspoon
  • Garam Masala- 1/4 th teaspoon
  • Salt to taste
  • Mustard oil (sarson ka tel)- to fry
HOW TO MAKE:
  • Wash the bitter gourds with soft hands and pat dry
  • In grinder, grind onion and raw mango into smooth paste, add salt to taste, red chilli powder and mix well.
  • Fill the paste into the bitter gourds with the help of spoon and tie it with white thread outside, so that masala does not come out while frying. Keep left over paste for the gravy.
  • Heat the mustard oil till its color changes from yellow to transparent one, add pinch of salt in it, it will remove smell present in the raw mustard oil. Put off the flame and let this oil to rest for a minute.
  • Switch on the flame and carefully place bitter gourds in the oil and let it fry properly on medium flame till bitter gourds turn golden brown. And remove it on kitchen towel/ tissue to remove excess oil.
  • Take same hot oil in other frying pan and add left over onion and raw mango paste and saute for a minute, stirring it constantly, and add garam masala and little salt and mix well.
  • Add fried karela in the gravy and saute for 2-3 minutes till each karela is coated well with the gravy.
