BALUSHAHI



Balushahi is North-Indian classic desert which you can find in every sweet shop. Here, we bring the easy recipe of Balushahi.



INGREDIENTS: (For 15-20 pieces)

  • All purpose flour (maida)- 1 cup
  • Baking powder - 1 pinch
  • Baking soda- 1/4th teaspoon
  • Clarified unsalted butter (desi ghee)- 1/4th cup
  • Curd (dahi)- 1/4th cup
  • Refined oil- to fry
For syrup:

  • Water- 1/3rd cup
  • Sugar (cheeni) - 1 cup
  • Crushed green cardamom (peesi huyi hari elaichi) - 5-6
For garnishing:

  • Fine almonds flakes (patle katte huye badam)
HOW TO MAKE:

  • In heavy bottom pan, add water,sugar and crushed cardamom and bring it to boil on medium flame, stirring in between to avoid burning of the sugar. Once boiled, simmer the flame and let the consistency of the syrup become one thread like (ek taar ki chashni). Once syrup is ready, put off the flame and keep aside.
(Note- To check its consistency, take a drop of syrup in between forefinger and your thumb. If single thread is formed and does not break when your forefinger and and your thumb are pulled away)
  • In a bowl, mix maida , baking powder, baking soda and desi ghee. Mix evenly to form crumble like texture.
  • Then, add curd and mix well to form soft dough. But do not kneed the dough.
  • Let the dough rest aside for 15-20 min.
  • Heat the oil in heavy bottom deep frying pan/ kadhai.
  • Make small balls out of this dough, not very smooth one.
  • Put a small ball in oil to check if oil is hot. Ball would sizzle if oil is hot.
  • Fry these balls on low- medium flame, till it comes up and turn golden brown in color. (Do not overcrowd the frying pan with balushahi balls, as it will expand while frying)
  • Once it turns golden brown, remove them on kitchen tissue, which will absorb extra oil.
  • Dip balushahi in syrup and cover all around the balushahi, but don't leave them in syrup. Once coated, remove balushahi in a greased plate(apply little refined oil on the plate to avoid sticking of balushahi once dried)
  • Garnish balushahi with almond flakes.
Serve balushahi once it is dried up. Mouth watering balushahi is ready to serve :)
