BROWN BREAD CUTLETS

Healthy + Tasty + Easy to cook = Wow




INGREDIENTS (Makes 4-5 cutlets)
  • Boiled mashed potatoes (ubaale masle huye aloo) - 2 medium sized
  • Fresh brown bread- 4 slices
  • Finely chopped onion (bareek kata pyaz) - 1 small sized
  • Finely chopped green beans (bareek kati hari lobia faliyaan)- 2 spoons
  • Half boiled green peas (halke ubaale huye harre matar)- 1/3 cup
  • Finely chopped carrot (bareek kati gajar) - 2 spoons 
  • Black mustard seeds (kali sarson dana) - 1 teaspoon
  • Curry leaves (karhi patta) - 5-6 leaves
  • Finely chopped green chillies (bareek kati hari mirch)- 1 
  • Finely chopped green coriander leaves (bareek kata hara dhaniya patta) - 1 teaspoon
  • Turmeric powder (peesi huyi haldi) - 1 teaspoon
  • Coriander powder (peesa huyi sookha dhaniya) - 1/2 teaspoon
  • Red chilli powder (peesi huyi lal mirch)- 1/2 teaspoon
  • Salt to taste (namak swaad anusar)
  • Lemon juice (nimbu ka ras) - 1 spoon
  • Oil - 4-5 spoons
  • Water - 1 cup
HOW TO MAKE
  • Heat 2 spoon oil in frying pan/kadhai. Add mustard seeds and let it crackle.
  • Add curry leaves, green chillies and fry a little. 
  • Add onion, green beans, carrot and saute till it turns little tender. Add all spices except salt and mix well. Remove this material in big mixing bowl
  • Dip bread slices in water and squeeze. This is done just to moisten the slice. 
  • Add moistened bread slices, potatoes, green peas, coriander leaves, lemon juice and salt to the vegetable mixture.
  • Mix well with your hands. Take a small portion of the mixture and roll it into a ball. Give a shape of cutlet.
  • Grease non sticky flat pan/ tawa with little oil and place cutlets on it. Keep flame slow. When one side of the cutlet turns golden, gently flip and fry the other side. Remove cutlets on a plate once you see an even golden color on the crust.
Serve hot cutlets with tomato ketchup or mint chutney. Enjoy healthy brown bread cutlets with hot tea, but of course not without family or friends :)
